The Best Sandwich I've Ever Made

I know it's a big statement, but this really is the best sandwich I've ever made. I love when kitchen experiments turn out wonderfully. Especially when they're healthy!

First of all, this bread is something of a dream. I purchased it from Whole Foods (check out the full loaf here - it's so beautiful!) It's called Ancient Grain bread and has a ton of different ingredients including chia seeds and various whole grains. It's texture is really similar to sourdough, but it obviously doesn't have the same tang. It's just a simple, hearty bread that's perfect for cheese, sandwiches, jam, or even just softened butter.

I just made this sandwich up based on what I already had on hand. Here's what I made:

Caramelized Onions & Red Wine Reduction:
  • I winged it but basically used this method with balsamic vinegar.
  • After cooking the onions and removing them from the pan, I used red wine (Malbec, specifically) to deglaze the pan. 
  • I cooked the wine on medium until reduced by about half.
  • Set reduction aside to pour on mushrooms later.
Parmesan Roasted Portobellos and Grape Tomatoes:
  • Preheat oven to 375 degrees.
  • Clean out the portobello mushrooms with a spoon - just scraped the gills out. 
  • Drizzle mushrooms with extra virgin olive oil, sprinkle with salt and pepper.
  • Turn the mushrooms top side down, place grape tomatoes (cut in half) in the mushroom caps,  and sprinkle with grated parmesan cheese.
  • Bake on a roasting pan until tender, approximately 10-15 minutes.
  • Pour the red wine reduction atop the cooked mushrooms.
Additions: Ingredients I added to the sandwich to give it a little more sumthin'.
  • Roasted chicken breast
  • Mixed greens
  • You could also try adding fig jam or omitting the chicken for a vegetarian option!
I hope you guys take the time to experiment in the kitchen. Screw the recipes and work with the ingredients you already have on hand to exercise your creativity! Sometimes, it's so much more beneficial (and FUN) to experiment than to plan!
