Here's just a really quick recipe to get you through your weekend get together. Homemade tortillas?? Oh you fancy, huh?...your guests will say. "Yes," you would reply, with a satisfied grin adorning your beautiful face. And if you aren't into praise or showing off, make them anyway cus they're tasty and will actually make those tacos, nachos, burritos, etc. just a little more guilt-free. Which gives some calorie wiggle room for margaritas.

One of my favorite dishes is definitely ceviche. It's fresh, citrusy, and social; simply, a combination of my favorite things. I could eat an entire bowl of this stuff, and with how healthy it is, there's no need to feel guilty when I actually do it. Perfect, right?

Nutritious Nutella???

Like basically everyone else in the world, I've gone back and forth between diets for quite some time. Regardless of what "diet" I'm on, however, I never try to deprive myself of too much. Back in the day (when I was young, I'm not a kid anymore, but some days I sit and wish I was a kid again), when I was training for my half-marathon, I was able to restrict myself much more. Then, I was eating around 1500 calories while working out for at least an hour 5-6 days a week. Nowadays, that just isn't happening.

Recipe: Waldorf Chicken Salad Sandwich

I'm not the biggest fan of mayonnaise. But for some reason, I really like Waldorf chicken salad. I just love the mix of flavors and textures: a little sweetness from the grapes, saltiness from the chicken, crunchiness from the almonds, slight bitterness from the celery... it's got everything! But the calorie count in all that mayonnaise is just too much for everyday. So, I made a small adjustment and the outcome was just as delicious.

I like weird things. Every time I go to a restaurant, my friends know I'm going to order the weirdest thing on the menu. I really never used to be this way. I used to think that when I tried to explore something beyond my comfort zone, I always ended up regretting it. Well, my palate has changed since then and now I prefer the weird. I prefer knowing what I like and what I don't rather than not knowing. I like to try new things and learn more about myself in the process. This particular combination may not be the weirdest thing in the world, but it's definitely a unique variation of a classic, and something I wouldn't have wanted to try in my adolescence.

Remember when I said lemon is one of my top five flavors? I really catered to my lemon addiction and discovered this cake was made for me. Well, literally and figuratively because I live alone and it's [thankfully] ALL MINE.
