Here's what I made with my extra Lemon Shortbread Cookies - Blueberry Coconut Whipped Cream Mini Pies with Chocolate Ganache! I kind of just threw the thing together using a hodgepodge of random recipes but it turned out awesomely.
- Graham Cracker Pie Crust - I just substituted whatever amount of graham cracker with the cookies.
- Chocolate Ganache - it's the surprise underneath the coconut whipped cream!
- Coconut Whipped Cream
- Then I just topped them with fresh blueberries
