Lemon Cake with Black Tea Frosting

Remember when I said lemon is one of my top five flavors? I really catered to my lemon addiction and discovered this cake was made for me. Well, literally and figuratively because I live alone and it's [thankfully] ALL MINE.

The other day (I'm still happily working on leftovers) I was just having one of those days. No, not PMS. Just one of those days I just feel bleh. I felt an urge to bake so I went with it. Lemon cake, something I've never made before, came immediately to mind. 

I found this recipe from my Evernote archives but didn't have cake flour or buttermilk for the actual cake. So I searched around the inter webs and found this recipe from Joy of Baking. Truth be told, I've tried quite a few recipes from this site and have never been let down. This cake was no exception. But the idea of black tea frosting was really intriguing so I decided to combine the two recipes. Breaking all sorts of rules. I'm such a badass.

I also incorporated the Honey + Jam's lemon glaze component to the Joy of Baking's cake. I really loved everything about this cake. It wasn't overpoweringly lemony so I feel it would be satisfying for even those who aren't in love with lemon. The cake was fluffy and airy but paradoxically dense. The silky, perfectly sweet frosting was black tea scented, immediately transporting its devourer into a floral wallpapered tea room wearing a wide-brimmed hat. Such a divine symphony of subtle flavors.

As you can tell, this cake quickly became one of my favorites. Excuse me while I get another slice.

  2. Lemon + black tea = genius. That's pretty much the flavour combo in Lady Grey, which is my fave tea ever! Beautiful looking cake too :)
