Lemon-Blueberry Muffins (with a surprise)

Would you believe me if I said these are vegan? They certainly didn't have to be, but I was curious as to what veganizing these muffins would do–how good they'd actually taste. What can I say? I'm curious. Curious like a cat. That's why my friends call me "Whiskers." (SNL reference.....fyi...moving on.)

And I gotta say, they're as tasty as they look! (Don't worry, the recipe below itself isn't vegan so feel free to stick with that!)

I kind of got on a weird vegan kick lately. It mostly began because I just ran out of animal products. No meat, no dairy... I don't have a car here at school so it's difficult to get to the store when things get too hectic, so I had to make due. I love experimenting in the kitchen anyway so it was really just an opportunity to mess around.

These are awesome for a quick and healthy breakfast! I just reheat them for 20 seconds in the microwave and they're good to go. I love making muffins for grab and go breakfasts. I just make them on Saturday or Sunday and I have them ready for the week!

Since I made these vegan, they were a bit more dense than regular muffins, but they were still really delicious. Also, DO NOT skip the lemon glaze! It really does the perfect job of tying all the flavors together and adds just enough sour-sweetness.

Recipe Modifications: I started things off with this recipe from Cooking Light magazine. I just replaced the buttermilk with 1 cup of almond milk and 1/4 cup lemon juice. Then I replaced the butter with an equal amount of apple sauce. I replaced the egg with half a large banana, mashed. Also, replace your cane sugar with beet sugar. Lastly, I replaced most the all purpose flour with whole wheat flour

I know it's Fat Tuesday and these are super healthy... But maybe save the really high-calorie stuff for dinner. Enjoy!
